Moong Dal Vada

Ingredients:



Split moong dal (yellow) - 1 cup


Potato - 1

Green chilli - 1
Finely chopped onion - 1
Shredded ginger - 1 tsp
Coriander leaves - handful
Cumin powder - 1 tsp
Oil - to deep fry
Asafoetida - a pinch
Besan flour - 1 tbsp
Salt - to taste

Method:

1. Wash and boil moong dal in 3 cups of water.
2. Wash and pressure cook the potato.

3. Peel the skin off and mash it. Keep aside.
4. Drain the water completely from the moong dal.

(During this demonstration, as seen in the picture below, moong dal and potatoes were boiled together)

5. Grind dal coarsely in a blender, sprinkling a tiny amount of water (if needed).
6. Transfer the batter to the mixing bowl.


7. Add salt and mash the potatoes in the batter.



8. Then add the finely chopped onions, green chilli, coriander leaves, ginger, cumin powder, asafoetida and besan flour and mix.


9. Care should be taken to ensure the mixture is soft. (the batter shouldn’t be watery or too thick)


10. Heat the oil in a frying pan.

11. Once the oil is hot, drop the batter in oil gently in batches, using a table spoon.
12. Do not overcrowd the oil.


14. Fry until the vadas are golden brown and crispy all around.
15. Drain it in kitchen towel.
16. Moong dal vadas are ready to be served.
