PLUM CAKE

Ingredients:

Maida- 1 cup
Caramelized sugar- 1 1/4 cup ( brown sugar ) 
Dry fruits- 1 cup( I used walnuts,black and white raisins,cranberries , cashews)
Oil -2 tbspn 
Eggs-2
Vanilla extract-1 teaspoon
Baking powder-1 teaspoon
Baking soda - 1/2 teaspoon
Salt-a pinch
Wine or rum-1 cup( I used orange juice )
Milk - 1 tblspn 
Orange zest-2 teaspoon 
Cinnamon powder- 1/4 teaspoon
Dry ginger powder -1/4 -1/2 teaspoon
Nutmeg powder-a pinch
Powdered clove - a pinch 


METHOD

soak the dry fruits and nuts with orange juice and orange zest for at least  2-4 hours .

 



Grease and dust the pan keep ready 



Powder the brown sugar for easy mixing .... 


Cream oil, eggs and vanilla together.  




Mix flour with brown sugar ,salt, powdered spices , baking soda and baking powder and keep aside . 




Fold in the flour with the above prepared batter and then add the soaked fruit mixture.




  Transfer mixture into the prepared tin and bake in a pre-heated oven for 30-40 minutes.


Top with some extra fruits and nuts 



Let the cake cool in the pans 10 min. then turn out. 



Dust the cake with icing sugar mixed with cinnamon powder . 



Slice and serve ...
