CHRISTMAS COOKIES
Ingredients:
Mix of dry fruits (Cranberries, Blue berries, black currants and glazed cherries) -80 grams
Mix of nuts (cashews , walnuts and Almonds) – 80 grams
Honey -1 or 2 Table spoon
Brandy/Rum or Red Wine -2 Table spoons Optional ) I substituted with just orange juice
Lemon or Orange zest- 1 small Lemon/Orange
Spice Mix (Equal quantities of cloves, cinnamon, Nutmeg powdered) -¼ teaspoon
Dry Ginger powder - 1/4 teaspoon
Salt -1/2 teaspoon
Butter – 100 grams
Brown Sugar- 100 Grams
Egg – 1 Large
Whole Wheat Flour - 160 grams
Baking powder -½ teaspoon
Baking Soda -½ teaspoon
Method :
The day before you plan to bake these cookies, slice together all the dried fruits and nuts and combine with Brandy or Rum or Red wine and set it aside in room temperature covered with a cling foil overnight. (I skipped this step )
Sieve together flour, spice mix, salt, baking powder and baking soda.Add the fruits and nuts mix and orange zest, crumble together the softened butter and powdered brown sugar.
Add the egg and mix until incorporated. Add flour mix, half at a time and fold together. Don’t over mix.
Refrigerate the dough until firm .
Make shapes with cookie cutter .
Place the cookies dough 2-inch apart on un-greased sheet pans and bake at 170 degree for 15 to 20 minutes, until lightly golden.
Remove and cool it on a wire rack. Store it in an air tight container when complete cooled.
