ALOO PARATHA


Ingredients: 

2 medium Potatoes boiled and peeled
1 onion finely chopped 
4tablespoons finely chopped Coriander Leaves
2 Green Chilli, finely chopped
1teaspoon Garam Masala
1teaspoon Red Chilli Powder
1teaspoon grated Ginger
2tablespoons Oil / butter 
Salt to taste 
Water to knead the dough 



METHOD:

1. Begin making aloo paratha by boiling the potatoes. Pressure cook or boil 2 large potatoes.

2. Take wheat flour in a mixing bowl. Add salt and oil and knead well.

3. Set the dough aside for 10-15 minutes.


4. In the meantime we prepare the potato stuffing. Take the boiled potatoes and peel off the skin. Mash the potatoes very well, any large chunks will tear the paratha while rolling. Add  chopped onions ,coriander leaves ,salt, garam masala powder, crushed ginger-green chillies,red chili powder.


5. Mix well and make it small balls for the stuffing.


6. Divide the dough into equal portions. Divide the filling into  equal sized portions.


7. Take a dough ball, dust in flour slightly and start to press the corners to make a small circle . Keep one portion of prepared aloo stuffing in the center think surface and close from all the sides. Seal in the center and press slightly.



8. Roll into thick circle.

9. While making the parathas, first heat a heavy cast iron tava , and cook very well from both sides. Use butter/ oil  for frying.
