VEGETABLE BIRYANI

Ingredients:

Basmati Rice - 2 cups
Oil - 1 tblspn
Ghee - 1 tblspn + 1 tblspn
Biryani leaf - 2 piece
Whole garam masala - few 
Onions - 1 large sliced thinly
Green Chillies - 2 slit
Ginger garlic paste -1 tblspoon
Tomatoes - 1 large chopped 
Curd - 1 cup
Garam masala powder - 2 tsp
Red chilli powder - 1 tblspoon
Coriander powder -1/2 tbl spoon 
Turmeric powder - 1 tsp
Salt to taste
Beans - 6 medium size chopped into small piece
Green peas -1/2 cup 
Sweet corn- 1/2 cup 
Sugar - 1 tsp
Water - 3 &1/2 cup
Chopped coriander leaves 



Method:

Wash and soak rice in lots of water for 30 mins.

Heat oil and 1 tblspn of ghee in a pressure cooker. Add in bay leaf and all the whole spice and fry for 30 sec.

Add in sliced onions and saute till it is brown.

Add in green chillies and saute for 2 mins till raw smell leaves from it.

Add in tomatoes and cook for 2 mins or so.

Add in chopped veggies and cook well.


Add in the masalas and salt. Mix well.

Pour in water ,Taste and adjust for salt.
Add in soaked drained rice and mix well.




Bring this to boil, simmer the stove and pressure cook for 15 mins.

Switch off the heat and let the steam go all by itself. Open the cooker.





Garnish with chopped coriander leaves . 

Optional step :
Now heat 1 tblspn of ghee and fry cashews till it golden, pour this ghee and cashews over the rice and mix well.
