METHI LEMON RICE

Ingredients: 

Rice – 2 cups cooked
Methi leaves (fresh)- 1 cup
Chopped onion- 1/2 cup
Urad dal - 1 tsp
Mustard seeds  -1 tsp
Cumin seeds - 1 tsp
Green Chillies – 2 slit
Curry leaves -1 spring
Salt to taste
Lemon Juice – 2 tblspn 
Oil- 2 tblspn



Method:



Heat oil in a kadai. Add mustard seeds, urad dal,chillies, cumin seeds,  curry leaves and fry for 30 seconds.

Add chopped onions and methi leaves and fry for 10 seconds.



Add lemon juice in and mix well.



Immediately add cooked rice in and mix well. Mix until everything is heated through.


Serve hot or pack in lunch box.
