KADAI CHICKEN

Ingredients:

Chicken - 10-12 piece
Coriander seeds -2 tsp
Cumin seeds -2 tsp
Fennel seeds -1tsp (optional)
Black pepper- 1tsp
Whole dry red chillies -6 
Ginger & garlic paste -2tblspn
Kashmiri chilli powder - 1 tblspn
Turmeric powder - 1 tsp
Gee -2 tablespoons
Oil- 2 tablespoons
Onion chopped -2
Tomato chopped -1
Cubed mushrooms (optional)
Salt to taste
Fresh coriander leaves chopped



Method:

Dry roast coriander seeds, cumin seeds and black peppercorns and grind to a coarse powder. 


Grind ginger and garlic to a fine paste. 



Heat ghee and oil in a kadai, add onion and sauté till lightly browned.



Add half the coarsely ground spice powder and ginger garlic paste and continue to cook for another 5 min .



Add tomato , chopped coriander and salt sauté till the tomatoes become tender . 




Add in chicken and salt stir , 



now add in chilli powder and turmeric powder pour water as needed 




and cook well till oil gets separated. 

Add cubed mushrooms (optional).
Chopped coriander and left over coarsely ground spice powder . Give a stir for 5 min or till mushrooms cooks. 



Garnish with chopped coriander leaves .
