RAVA DOSA


Ingredients:

Rava /Suji  – 1 cup
Rice flour – 1/2 cup
All purpose flour / maida – 1cup

For Tampering: 

Oil- 1 tblspn
Mustard Seeds  – 1 tsp
Cumin Seeds  – 1 tsp
Whole Pepper – 1 tsp(crushed)
Green Chilli – 2 chopped finely
Curry leaves – 1 spring
Ginger – 1 tblspn minced
Onion –  1 finely chopped
Coriander Leaves  – finely chopped



Method: 

In a mixing bowl, mix together rava, rice flour, maida, salt together. Add 4 to 4-1/2 cups water and make a thin batter without any lumps.

Now make tampering . Heat oil , add mustard, cumin and pepper and sauté for a min.

Add in ginger, curry leaves, green chilli, onion and mixwell. Saute for a min.

Add this to the batter. Add coriander leaves too and mix well.

Check for salt .



Heat a tawa pan or girdle and let it become hot. Scoop some water in your palm and splash it on the pan. The water droplets with sizzle and the pan will dry out. 

Immediately pour the thin batter in a circular motion. Don’t Spread the batter..Just pour it thinly here and there.

Pour the batter from a height so that holes will form on the dosa..Don’t spread the dosa.

Drizzle a few drops of oil around the dosa. Cook over low flame till it turns crisp. No need to flip it. Fold and transfer to a serving plate.
