PEPPER CHICKEN
Ingredients :
1/2 kg chicken, cut into medium size pieces
Whole spice - 2 clove, 2 cardamom , 1/2 inch cinnamon , 1 bay leaf.
1 tablespoon oil
1 onion, finely sliced
2 - inch piece ginger, finely sliced
12 garlic cloves, finely sliced
1 tablespoon of fennel seed powder
2 tablespoon pepper powder
1/2 tablespoon freshly crushed pepper
8 curry leaves
salt (or to taste)
1/2 cup water
Method:
Wash and clean chicken pieces.
Heat oil in a frying pan. Splutter all while garam masalas. Add finely sliced onion and fry on a low to medium heat until golden color.
Add sliced ginger and garlic. Stir well.
Add curry leaves and stir well.
Add 1 tablespoon of pepper powder and 1 tablespoon of fennel seed powder.
Add chicken pieces, salt to taste add water if necessary .Mix all the ingredients well.
Cover with a tight id and cook on a low to medium heat for 25 - 35 minutes add the remaining pepper powder. Cook till chicken pieces softens , well coated with pepper powder gravy and gravy thickens.
Finally add freshly crushed pepper powder and mix well.
Transfer to serving dish.
Serve hot .
