OKRA STIR FRY/ lady's finger stir fry
Ingredients:
1. Okra / Lady's finger - 2 cups (finely sliced)
2. Green Chilli - 4 (thinly chopped)
3. Shallots - 5 (chopped)
4. Grated coconut - 1/2 cup
5. Turmeric powder - 1/4 tsp
6. Oil - 2 tbsp
7. Salt to taste
8. Curry leaves - 1 sprig
Method:
Wash and clean the Okra. Cut them into thin slices
Heat oil in a pan. Add curry leaves and sizzle them
Add the chopped green chilies and shallots. Saute well till shallots turns translucent
Put turmeric powder and fry for 1 minute
Add the sliced Okra and mix well. Saute on high heat for 2 minutes.
Stir fry for 8-10 minutes on low heat.
Now add grated coconut and mix well. Cook for another 5 minutes on low heat.
Okra stir fry is ready to be served with curd rice .
