LEMON ROSEMARY GRILLED CHICKEN

Ingredient:

Less than 1 kg chicken 

1 Tablespoon grated lemon zest

lemon juice, freshly squeezed from 1 lime

1 tblspn rosemary 

2 Tablespoons olive oil/ canola oil

coarse salt 

Red paprika powder 

freshly ground pepper

2 medium lemons, halved crosswise

oregano 1tspn

Thyme 1tspn



Method :

Prepare marinade: 

In a small bowl, mix lemon zest and lemon juice, oregano, rosemary , thyme , oil, 2 teaspoons coarse salt and 1 tblspoon red paprika powder.

Apply in the whole chicken and inside the cavity and also inbetween skin of the chicken .

Place the lemon inside the cavity of chicken.

Let marinate at room temperature for 30 minutes.

Grill the chicken: 

Preheat grill to high temperature for 10 minutes.

Insert chicken in rotisserie and Place chicken on grill. Close the oven and cook until lightly browned and cooked through, about 40-45 minutes. If chicken is browning too quickly, turn grill to low heat.



Transfer chicken to cutting board. Tent with foil let rest 10 minutes. 



Cut into four and Serve chicken breasts with grilled lemon halves. 


Tips: soak the whole chicken in salt water for a minimum of 5 hours (keep in fridge) . This gives the best soft result in grilling chicken .
