CARROT RICE- KIDS LUNCH BOX
Ingredients:
1 cup basmati rice
1 cups onion chopped
2 cups carrot grated
2 tsp oil
a small piece of cinnamon
2 cloves
1 bay leaves
a few curry leaves
Salt as per taste
1 tsp coriander powder
1/2 tsp cumin seeds
2 tblspn grated coconut
1 tsp red chilli powder
Ground nut powder
How to make carrot rice:
Grind the carrot without adding water. Keep aside .
Cook the rice with salt and let it cool.
Heat oil in a heavy bottom pan ,Add all whole spices Fry them.
Add chopped onions. Once the onion is cooked, add the grinded carrots. Fry till the carrots are cooked.
Add rice and fry in a low flame. Add salt and add all the masala powder.
Mix it well with the rice.
Finally add groundnut powder and remove from the flame.
And store it in the lunch box.
