MUTTON PULAO



Mutton pulao 
Ingredients :


Mutton / lamb -- 1/2 kg
Ginger garlic paste -- 2 tsp
Onion -- 3 large thinly sciced
Green chilly -- 5 to 6 nos.
Cardamom,Cloves,Cinnamon -- each 2 nos.
Coriander Powder-- 2 tsp
Turmeric powder -- a pinch
Coconut Milk -- 2 cups
Water -- 1 cup
Mint leaves -- a handful
Salt -- to taste
Basmati Rice -- 2 cups
Oil -- 4 tbsp
Coriander leaves -- a handful
Cashew nuts - 15



Method :

Pressure cook the mutton along with ginger garlic paste, turmeric powder  and adding half the salt,one cup of water  for 7 to 8 minutes to almost 90 % depending upon how tender ur meat is.  Once it's almost cooked,Transfer this to a bowl and reserve the soup. 

Soak the basmati rice for 10 minutes. 

In the heavy bottom vessel, add the oil and do the splutter with cinnamon,cloves n cardamom. 

After that add the onion and fry until it's translucent. Now add in the ginger garlic paste and fry till the raw smell goes. 

Add the cashews and fry it golden . Add the green chillies ,mint leaves,coriander leaves as well and saute. Add coriander powder. 

Add the rice and fry for 2 to 3 minutes on the slow flame. 

Now pour the coconut milk and the reserved one cup of mutton soup and mix it well. 

Check for the salt and cook for exactly 4 to 5 minutes. Now dump in the cooked mutton pieces and mix . Check for the required salt and cover with a heavy lid and allow to cook in a slow fame until done . 

Yummy mutton pulao is ready to scoop up...
