MIXED VEGETABLE CURRY



Ingredients:

Cucumber-1 small
Snake gourd-1 small
Raw Banana – 1
Cluster Beans – 10
Tomato -1 large
Brinjal – 1 large
Shallots- 10
Turmeric Powder -  a small pinch
Salt as per taste
Tamarin Extract – 3/4 cup
Yougut- 2 tbl spoon 

Grind together:

Shallots-4
Coconut – 3/4 cup, grated
Green Chillies – 3-4
Cumin Seeds – 3/4 tsp

To splutter:

Mustard seed-1 tspn
Cumin seeds-1tspn
Curry leaves
Coconut oil 






Method:

Chop all the vegetables into 1 inch  long pieces.

Cook all the vegetables with excess water.Add turmeric powder along.

After vegetables get cooked add salt ,tamarind extract and ground coconut paste.



Simmer for a few minutes and bring to boil.

Add the yogut.

Check for the salt.

Heat coconut oil in a tadka pan and splutter the given ingredients.

Pour on the vegetable curry Serve hot with rice .
