FISH BIRYANI
Ingredients:
For Cooking Rice:
Basmati Rice - 2 cups
Water - 8 cups
Cloves - 4
Cinnamon - 1 small stick
Bay Leaf - 2
Salt - 3 tsp
Oil-1tsp
For fish fry :
6-7 pieces of fleshy fish
Ginger garlic paste -2tsp
Chilli powder - 1 tsp
Coriander powder - 1 tsp
Turmeric powder - 1
Oil - 1/4 cup or gee
For Briyani:
Cardamom - 4
Cloves - 4
Cinnamon - 1 small stick
Bay Leaf - 2
Onion - 2 large thinly sliced
Green Chilli - 3 slit
Ginger Garlic Paste - 2 tblspn
Chilli powder - 1 tsp
Coriander powder - 1 tblspn
Turmeric powder - 1 tsp
Garam Masala Powder - 2 tsp
Tomato - 1 large chopped
Curd - 1 cup
Mint Leaves - 1/2 cup finely chopped
Coriander leaves - 1/2 cup finely chopped
Salt to taste
Lemon juice -1/2lemon
METHOD:
Wash and Soak rice for 30 mins. Now boil lots of water along with the the whole garam masalas and salt. The salt in the water should be bit high. Add 1 tsp oil.
Add the soaked rice in the water and cook it for 8 to 10 mins till the grains are 90 percentage cooked. Drain it in a colander and keep aside.
Marinate the fish with ginger garlic paste ,chilli powder , coriander powder , turmeric powder salt , oil and sliced onions. given for 30 mins.
Heat oil in a heavy bottom pan add little oil and shallow fry the fish with the sliced onions.
In a deep heavy bottom vessel heat oil add bay leaves whole garam masalas and fry them for few mins. Add in sliced onions, green chilli and saute for 5 mins or so.
Once the onion is cooked, add in ginger garlic paste and saute them for a min.
Now add in all the spice powders and mix them for 30 sec.
Add in tomatoes and a add little water. Cook this for 5 mins till the tomatoes is mashed completely.
Add in salt, mint leaves, coriander leaves and curd. Mix well.Cook this for 5 mins till the masala is completely cooked.
Arrange half of the fried fish over the gravy .Now spread the cooked rice on top and add some more coriander leaves and place the remaining fish pieces on top of the rice .
Cover this whole thing and place over a heavy bottom iron tawa and put the tawa on low heat. Let this whole thing be on dum for 15 to 20 mins. Open the lid , squeeze the lemon and mix everything up.
Serve the hot spicy fish Briyani .
