SWEET CORN PULAO


Ingredients

Basmati rice-2 cups(soaked for 30 min)
Coconut Milk-4cups
Sweet corn-1 cup
White onions chopped- 1 large
Coriander leaves for garnishing
Salt to taste
Sugar-1 tsp
Ghee-2 tbl spoon

For Seasonings:

Ginger-1 inch piece finely chopped
Cinnamon(pattai)-1 stick
Pepper-1 tsp
Bay leaves-1
Cardamom-2
Cloves-2
Green chilli-3


Method:

In a heavy bottom pan add oil+ghee and heat it up..now add in all the seasoning ingrediants and fry for 1 min.

Add the chopped onions.

Then add in the soaked rice and fry for 1 min.

Add in coconut milk and bring that to boil. 

Add salt and sugar.Cover and cook for 10-15 min.



After the rice half cooked add the sweet corn over the rice do not mix .

Cover with a heavy lid and cook for 5 min.

When the rice is done add chopped coriander leaves and ghee and mix well.



Serve hot with any spicy chicken curry...
