STUFFED BRINJAL CURRY


 Ingredients
Small Brinjal: 8-10
Onions (shallots): 5-6
Tomatoes: 2
coriander  powder: 1/2 tablespoon
Mustard seeds : 1/2 teaspoon
Cumin seeds : 1/2 teaspoon
Chana Dal: 1 tablespoon
Turmeric powder: 1/2 teaspoon
Red chilly powder: 1/2 tablespoon
Tarmarind water: little
Oil: 3-4 tablespoon
Salt: to taste
METHOD:
 ·       Roughly grind onions, ginger, chana dal, tomato, chilly powder, and turmeric powder separately.

 ·       Wash and cut the Brinjal as shown without removing the top.

·       Stuff some of the prepared masala paste into the slits of the brinjal and keep it aside.
 ·       In a pan and heat up the oil, then add mustard seeds, cumin seeds, and curry leafs.
·       Add the remaining masala paste and cook well.

·       Pour little tarmarind water to it.
 ·       Now put the brinjals and add salt cook well till the brinjals become tender.
