INGREDIENTS:
- 1 cup Basmati Rice
- 1 medium Onion, chopped (white onions preferred)
- 1 cup finely chopped carrot
- 1 cup chopped capsicum (colored capsicum preferred)
- 1 cup finely chopped cabbage leaves
- Chopped spring onions
- 6-7 Garlic, sliced (or more of you like)
- 1/2 cup Soy Chunks
- 2 eggs (for pure vegetarian avoid eggs)
- 3 cloves, 1”cinnamon stick, 1 bay leaf
- Pepper powder
- 1 tblsp chili vinegar
- Salt to taste
HOW TO DO:
It is also called as Meal maker, Soya crumbles or TVP (Textured Vegetable Protein). I used the Chunks varieties that are available in the shape of mini balls.
Drop the Soy Chunks in hot water. Boil for 4-5 min. drain the water and Squeeze off the excess water, I do not prefer this in big pieces so chopped it down to smaller pieces.
Soak the basmati rice in water for 15 min.
While that's soaking, heat a large pan and add 1-2 tblsp or butter. When hot, add the onion to it.
After a minute or 2 when the onions are soft, add the sliced garlic, now add the soya chunks add salt and pepper cook well.... add a few drops of vinegar to it. Now break 2 eggs and cook along with it. Add pepper powder. Keep it separately.
Now grease the pan with little more butter or oil and cook the chopped carrot, after it’s done add the cabbage and cook.... add the capsicum add salt. Add the rest of the vinegar and cook well... mix the above prepared soya chunks to these vegetables.
Boil water add salt, all spices and oil add the soaked and drained basmati rice and cook (do not overcook)
Drain and spread the rice in a large pan to avoid sticking together.
In a heavy bottom pan speared a layer of vegetables, then a layer of rice... layer alternatively and close the lid and keep in low flame to get the aroma mixed well...
Garnish with chopped spring onions and serve the party rice.
Note:
U can also use shredded boiled chicken strips instead of soya chunks.
enjoy cooking - PREMISHA SAVIOUR
