CUCUMBER BUTTER MILK
Ingredients
3 cups chopped cucumber
1 1/2 cups low-fat curds
salt to taste
a few mint leaves OR phudina leaves
a dash of chopped green chillies (optional)
1/2 cup crushed ice
Method

Method
1. Combine the cucumber along with ½ cup of water and salt to taste in a deep pan and cook on a medium flame till it turns soft (approx. 4 to 5 minutes). Keep aside to cool.
2. Cucumber can be added as such without cooking too,
3. Add coriander leaves and g.chillies, Blend in a mixer till smooth.
4. Add the curds and salt and mix well. Keep aside.
5. Combine some more coriander leaves and green chillies and add it to the mixture.
6. Place some crushed ice in 4 individual glasses and pour equal quantity of the juice over it. Serve immediately garnished with cucumber.
