 NANDU GREEN KURUMA

CLEANING THE CRAB:

-Flip crab over and remove the apron

-Using high pressure water, spray out the entrails.

-Using thumb, twist off the mouth parts

-Remove spongy gills from both halves and rinse


-The crab is Cleaned and ready to cook
METHOD OF PREPARATION:

-WITH LITTLE OIL STIR FRY THE CARDOMON, CINNAMON STICK, CLOVE, SHALLOTS, GINGER AND GARLIC, CURRY LEAVES…
ALLOW TO COOL ADD CORIANDER LEAVES TO IT AND GRIND AS A PASTE

-GRIND SEPERATELY COCONUT, GREEN CHILLY, POPPY SEEDS, FENNEL SEEDS

-        Now in a pan heat oil and add chopped onions and fry till golden brown

-        Now add the spices, shallots and ginger, garlic paste, turmeric powder, salt  and cook

-        Add little water and put the crabs and cubed tomatoes close the lid and cook for 3 min.

-        Add the coconut paste add necessary water and cook again

-        Check for the salt

-        In another pan with little heated oil splutter fennel seeds and curry leaves add to the nandu kuruma.

-        Take off the pan from flame.

-        Garnish with crushed pepper and freshly chopped coriander leaves.
