APPAM - CRISPY AND SPONGY
APPAM
Ingredients:
1-1/2 cups raw rice
1-1/2 cups parboiled rice
2-3 tbsp. urad dal.

½ grated coconut
1 cup coconut milk
1/2 tsp. soda bicarbonate
1 tsp salt
1 cup coconut milk
1/2 tsp. soda bicarbonate
1 tsp salt
Method
1. Soak the rice for 4 hours in water
2. Grind the coconut and rice to a fine thick paste, keep overnight.
3. Morning add coconut milk, soda bicarb, salt and sugar.
4. Beat well.
5. The batter for Appam is ready
APPAM BATTER
EASY METHOD FOR PREPARING APPAM BATTER:
1-1/2 CUPS SOAKED RAW RICE
1-1/2 CUPS DOSAI BATTER (PREPARED ALREADY)
1/2 GRATED COCONUT
METHOD:
FIRST GRIND THE COCONUT IN THE GRINDER
THEN ADD THE SOAKED RAW RICE AND GRIND WELL
NOW ADD THE ALREADY PREPARED DOSAI BATTER AND MIX WELL AND KEEP OVER NIGHT
MORNING THE BATTER WILL BE READY
JUST 5 MINUTES BEFOR PREPARING THE APPAM
ADD A PINCH OF SODA BICARBONATE, SALT AND SUGAR

STEPS TO PREPARE APPAM
STEPS TO PREPARE APPAM:
1. Pour a spoon full of batter on hot appa kadai.
2. Hold handle and rotate and tilt the kadai quickly such that its full base is covered with batter.
3. Do not spread with spoon.
4. Cover with the lid and cook for few minutes till the edges become light brown.
5. Crispy appam is now ready to serve.
