COCONUT RICE- KIDS LUNCH BOX SPL


Ingredients:
 
Basmati Rice- 1 cup
Onion- 1 (chopped)
Cinnamon- 1 piece
Bay leaves- 2
Green cardamom- 1
Garlic- 10
Green chilies- 4
Freshly made Coconut milk- 1 1/2 cups
Grated coconut- 1/2 cup
Few Cashew nuts
Gee- 2 tablespoons
Oil- 4 tablespoons
Salt
 
how to prepare:
 
Heat gee and oil in a pan and add the spices and onions, garlic & green chilies and fry until the onions are soft.
 
Add the grated coconut and fry till light brown colour.
 
Add the cashewnuts and fry.

Then add rice and fry for a few minutes.

Transfer this to a pressure cooker.

Add salt, 1 1/2 cups of coconut milk and 1/2 cup of water and cook.

Coconut rice is  now ready for the lunch box.
